Red Bean and Catfish Chili

2 tablespoons vegetable oil
1 large onion, minced
3 garlic cloves, minced
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1 teaspoon cinnamon
1 teaspoon oregano
1/2 teaspoon cayenne pepper
16 oz. can kidney beans, drained and rinsed
1/2 teaspoon salt
Pepper to taste
1 pound catfish fillets, diced
Directions
In a large saucepan over medium heat, cook the oil with the next 8 ingredients for 2 to 3 minutes; stirring constantly. Add tomatoes, green pepper, kidney beans, salt, and pepper.
Place the diced catfish fillets on top of the chili mixture and gently stir them into the chili. Turn down heat and simmer for 15 minutes. Serve immediately.
